Whole Wheat Vanilla Wafers

Another yummy recipe from Heavenly Homemakers.

1/2 c butter, softened
3/4 c sucanat
1 egg
1 tsp vanilla extract
1 c ww flour
1/4 tsp salt
1/2 tsp baking powder

Cream butter and sucanat. Bean in egg and vanilla. Stir in dry ingredients. Line a baking sheet with parchment paper (I didn't do this since I was using a baking stone, I should have). Place very small spoonfuls on paper. Bake at 325 for 5-15 min (I baked 15 min). Turn off oven and leave in oven to crisp for about 1/2 hr.

Breakfast Cookies

Another one from Heavenly Homemakers

1 c butter, melted
3/4 c honey
2 eggs
1 tsp salt
1 tsp cinnamon
1 tsp baking soda
1 tsp vanilla
1/2 c buttermilk
2 c whole wheat flour
2 c rolled oats
1 c raisins or chocolate chips

Combine first 8 ingredients. Add oats & flour. Fold in raisins or chocolate chips. Place heaped spoonfuls on cookie sheet (leave space between them, they spread) Bake at 350F for 15-20 min. Cool 3-4 min on cookie sheet before removing to wire racks.

I use regular milk instead of buttermilk (because I'm lazy) & chocolate chips. I'm going to let the girls try them in the morning (made them tonight), but the little piece I broke off tasted good, so hopefully these will be a hit for days when we're needing to eat breakfast (or other meals) on the go :)

Whole Wheat Snickerdoodles

1/2 c butter/margarine
3/4 c brown sugar (I use sucanet)
1 lg egg
1/2 tsp vanilla extract
1 tsp baking powder
1/4 tsp salt
1 1/2 c whole wheat flour
2 T white sugar mixed with 1 1/2 tsp cinnamon
Cream first 4 ingredients. Add dry ingredients (except cinnamon sugar). Stir to form thick dough. Roll balls in cinnamon sugar. Place on greased cookie sheet. Flatten slightly. Bake at 400 for 10 min.

These were more "gingerbready" than regular snickerdoodles, but still yummy.

Chocolate Snowflakes

These didn't look like snowflakes to me, but they're yummy anyway.

2 c sugar
1/2 c veg oil
4 1oz squares unsweetened chocolate, melted
4 eggs
2 tsp vanilla
2 c flour
2 tsp baking powder
1/2 tsp salt
3/4 c powdered sugar
Combine 1st 3 ingredients in lg mixing bowl; beat on med until blended. Add eggs & vanilla, mix well. Combine flour, baking powder & salt. Add about 1/4 of the dry at a time to the wet, mix well after each addition. Cover and chill at least 2 hrs. Shape into 1" balls, roll in powdered sugar. Place at least 2" apart on greased cookie sheets. Bake at 350 for 10-12 min. Cool on wire racks.

Banana Oatmeal Cookies

These came from my friend Mary, several years ago, they're yummy & relatively healthy too!

3/4 c butter
1 1/2 c flour (ww works fine)
1/2 c sugar (can be reduced, esp if bananas are very ripe)
1/2 tsp baking soda
1 tsp salt
1/4 tsp nutmeg
1 tsp cinnamon
1 egg (or 1 T ground flax + 3 T water)
1 c mashed banana
1 3/4 c rolled oats
1/2 c chocolate chips, dried fruit, &/or nuts

Cream butter & sugar. Add egg & banana. Mix dry ingredients (flour thru cinnamon) together & add to wet. Add oats slowly. Mix in optional. Bake at 375 for 12-15 minutes.
